Avelino Álvarez Ordóñez (Leon, 1981) is assistant professor at the Department of Food Hygiene and Technology of Universidad de León. He has a PhD in Veterinary Studies, and is a researcher into food safety, microbiological ecology and resistance to antibiotics.
He collaborates as an expert for bodies from a number of countries and on the BIOHAZ panel on biological risks of the European Authority on Food Safety (EFSA).
PROJECT
His project studies the acquisition and dispersion of resistance to antibiotics through the food chain.
Specifically, he researches the hypothesis that the normal cleaning and food processing practices in slaughterhouses and the industry favor the dissemination of microorganisms resistant to antibiotics, compromising the safety of the food chain.
